Don't apply for any new credit, don't move any of your assets or cash around, don't voluntarily change your employer without notifying your loan officer, don't purchase anything that incurs any additional debt, don't schedule your move until after the transaction closes, don't deposit any large amounts of cash without consulting your loan officer, and don't change jobs.
